Ingredients

1/4 cupButter

1/3 cupWheat flour, white, all-purpose, enriched, bleached

1 1/2 tspTable Salt

1/8 tspBlack Pepper

1 cupCanned Chicken Broth

1 1/2 cup1% Milk, with vitamin A

2 cupWhite Rice, Long-grain

1 lbRaw Chicken Breast

4 ozMushrooms

1/3 cupSweet Peppers

4 sprigParsley
Directions
1. Heat oven to 350º F2. Melt butter in a large saucepan over low heat. blend in flour, salt, and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in broth and milk.
3. Heat to boiling, stirring constantly. boil and stir 1 minute. Stir in remaining ingredients except parsley.
4. Pour into ungreased baking dish, 10x6x1. 5', or 1 1/2 -quart casserole. bake uncovered 40 to 45 minutes. Sprinkle with snipped parsley and serve.
