Rice and Chicken Casserole

Ingredients

  • 1/4 cup 
    Butter
  • 1/3 cup 
    Wheat flour, white, all-purpose, enriched, bleached
  • 1 1/2 tsp 
    Table Salt
  • 1/8 tsp 
    Black Pepper
  • 1 cup 
    Canned Chicken Broth
  • 1 1/2 cup 
    1% Milk, with vitamin A
  • 2 cup 
    White Rice, Long-grain
  • 1 lb 
    Raw Chicken Breast
  • 4 oz 
    Mushrooms
  • 1/3 cup 
    Sweet Peppers
  • 4 sprig 
    Parsley

Directions

1. Heat oven to 350º F

2. Melt butter in a large saucepan over low heat. blend in flour, salt, and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in broth and milk.

3. Heat to boiling, stirring constantly. boil and stir 1 minute. Stir in remaining ingredients except parsley.

4. Pour into ungreased baking dish, 10x6x1. 5', or 1 1/2 -quart casserole. bake uncovered 40 to 45 minutes. Sprinkle with snipped parsley and serve.
